Since discovering how to use plantains as a substitute for flour I have been experimenting with a lot of different ways to make pancakes and waffles. And let me tell you, it has been very delicious :). This recipe is slightly sweeter than the other ones and perfect if you are just starting out with eating healthier.

Tips for making the pancakes
- You can use fresh or frozen berries for this blueberry lemon pancake recipe, either works fine. Just add them to the batter once you are done with blending all the other ingredients.
