This recipe will be the hit for your next party or movie / binge watching night. Who does not love to dip chips into delicious guacamole?
We all know that the ripeness of avocados can be a bit tricky. I am sure many of you can relate that whenever you need an avocado you don’t have any ripe ones. And then all of a sudden you have too many ripe ones. So there are two solutions to that problem. The first one is when you go to the store make sure you buy a few avocados that are different in their ripeness. The second one is, drumroll…..make guacamole out of all the ripe ones.:) It would be such a shame for them to go bad!
Best ways to enjoy your Guacamole:
I love to dip carrots, cucumber, radish and kohlrabi. But really most veggies work. One of my favorite Nacho replacement are plantain chips or root vegetable chips. I really like Terra chips and grain free tortilla chips from Siete.
I could eat this guacamole every day, but I usually make it once a week. It tastes great with salad wraps or just as a dip with your meal. It pairs really well with tostones and some protein. You can also just do it the peanut butter/Nutella way and eat it straight from the spoon:).
I don’t eat tomatoes and I actually prefer guacamole without them. Of course feel free to add them if you don’t follow an autoimmune protocol. If you prefer lime over lemon, just add one whole squeezed lime to the mix. I usually use lemon because I find it very hard to find squeezable limes in NYC. After visiting Mexico and trying “real” fresh, juicy and delicious lime over there I got spoiled and don’t like them so much here anymore. 🙂
The recipe is for two people, but I can already warn you: Even if you double it up it will not last longer than 5 minutes if you bring it with you to a party:)
