Do you want to change up your vegetable intake and make it more fun? This roasted cauliflower garlic dip is a very nice way to get in an extra load of vegetables while snacking. And if you cannot eat hummus anymore this recipe can be a nice substitute. It is very simple to make but does require a little bit of time. But the good news is that you don’t have to do much. Most of the time the veggies are roasting in the oven.
Just be careful to not eat the cauliflower while it’s cooling off. It is gonna smell and looks very tempting, and I have to admit I kept stealing some. Once the garlic and cauliflower have cooled off all you have to do is place them in a blender, add the additional ingredients and mix it until it is smooth. You will end up with a cereal bowl size of this dip. It is quite filling, so if you don’t eat it all the same day you can keep it in the fridge for the next days. I actually found that it tasted better the day after.
The best ways to enjoy the roasted cauliflower garlic dip
- Dip your favorite raw veggies like carrots, celery, and cucumbers into this tasty sauce.
- My favorite chips to use with this dip are the grain free tortilla chips from Siete. If you haven’t tried them yet you should. They are so delicious.
- It is also a great dip to add to wraps or salads.
