Roasted Cauliflower Garlic Dip

Do you want to change up your vegetable intake and make it more fun? This roasted cauliflower garlic dip is a very nice way to get in an extra load of vegetables while snacking. And if you cannot eat hummus anymore this recipe can be a nice substitute. It is very simple to make but does require a little bit of time. But the good news is that you don’t have to do much. Most of the time the veggies are roasting in the oven.

Just be careful to not eat the cauliflower while it’s cooling off. It is gonna smell and look very tempting, and I have to admit I kept stealing some. Once the garlic and cauliflower have cooled off all you have to do is place them in a blender, add the additional ingredients and mix it until it is smooth. You will end up with a cereal bowl size of this dip. It is quite filling, so if you don’t eat it all the same day you can keep it in the fridge for the next days. I actually found that it tasted better the day after.

Roasted Cauliflower Garlic Dip

This delicious roasted cauliflower garlic dip is the perfect way to get in extra vegetables while snacking. It is dairy free, nut free, paleo, and AIP.

Cook Time 30 minutes
Total Time 45 minutes

Ingredients
  

  • 1 head cauliflower
  • 1 head garlic
  • 5 Tbsp extra virgin olive oil (for roasting)
  • sea salt and pepper (omit pepper on the AIP)
  • 4 Tbsp extra virgin olive oil
  • 1.5 limes squeezed

Instructions
 

  • Preheat oven to 350 degrees. Wash and cut cauliflower into florets, peel garlic and place on a baking sheet. Drizzle with olive oil and season with salt. Bake for 40 minutes or until golden brown and cooked through. Turn the vegetables halfway through.
  • Let cool off. Place vegetables and the rest of the ingredients in a blender and mix until smooth. Taste and add more salt and pepper if necessary.
  • Enjoy!
